Overnight berry oats

Over night raspberry and blueberry oats

This recipe is absolutely delicious and takes no time at all to make. It's a cheats version of over nights oats, because normally the oats go into the fridge very liquidy and they absorb it all over night.
 But I never could seem to get it right, so I tried cooking the oats before and I think the texture is soooo much better. You can have it for breakfast, lunch, dessert or dinner!


Ingredients:
(One serve)

Half a cup of oats steel cut 

Water

Cinnamon

Mixed spice

1 tablespoon of Stevia sweet

1 cup of frozen Raspberries

1/2 cup of frozen Blueberries




Directions:

1. Place half a cup of oats, cinnamon, mixed spice to liking, and Stevia in a bowel and mix.

2. Fill bowel with water so it covers oats by just over half a centimetre  

3. Microwave until cooked, you want it to be a thick smooth consistency, not to dry! Rest of water absorbs over night

4. Whilst hot, add raspberries and blueberries on top of oats

5. Cover and put in the fridge over night. The berries melt into the oats and come out amazing!

Calories: 230
Carbohydrates: 36.3g
Fat: 4.1g
Protein: 5.2g
Dietary Fiber: 7.3g





You can add anything you like, I use things such as nuts, coconut, chia seeds and fruit. You can eat it hot or cold, depends how you feel. :) Sometimes I even use a protein bar melted on top as you can see by the photo below. Thats delicious! just slice it up and microwave for 10 seconds.. Do not microwave for anylonger or it will go hard!

Bacon and egg quiche


Bacon and egg quiches

So this is my Bacon and egg quiche, but you can really do anything you want to it by using any form of protein and vegetables

They are absolutely delicious, I previously have done ones similar, but these were the best! Give them a try and let me know what you think! They are easy an quick to make.




Ingredients:
(makes three)


3 eggs

3 egg whites or 60 of mls egg white

90g of lean bone ham

40g of fennel (I used this vegetable because it was in my fridge, but you can use anything)

1x Edgell super sweet corn 72g can

200g of rice, (I used basmati)

30g of mozzarella cheese

garlic powder

oregano

salt and pepper




Directions:

1. Line three small ramekin dishes with 30g of ham each

2. Mix together in a bowel the vegetables, eggs, egg white, rice, herbs and seasoning (anything you like)

3. Fill ramekin dishes evenly

4. Garnish with mozzarella cheese on top 

5. Bake in a pre-heated fan forced oven at 200 degrees for about 25 minutes or until cooked and golden brown on top

6. Remove once cooked and run a knife around the edges to loosen them. Let them cool for 10 minutes before turning them out. They should drop out perfectly!

Calories: 245 each
Protein: 16.5g
Carbohydrate: 24g
fat: 10g

Raspberry frozen yoghurt icy poles



This is a very simple, easy, healthy recipe that is low in calories while satisfying your sweet tooth.

Ingredients:
(Makes 6 icy poles)

Frozen raspberries- 160g
Natural low fat greek yoghurt (I used mundella low fat greek yoghurt)- 470g
5 tablespoons of stevia sweet or any preferred sweetener



Directions:
Wizz together raspberries, yoghurt and stevia

Fill icy pole containers

freeze over night

Done :)

Fat: 1.5g
Protein:  4.3g
Carbohydrate: 9.3g
